Cinnamon Banana Muffins
I had a few bananas getting pretty ripe over the weekend and was looking for something different to make with them. I've been trying to think of some new things to make for breakfast for the girls and I thought these would be a big hit and they definitely were.
Cooking for a toddler can be very trying. They can eat the same thing every single day for 6 days and on the 7th day it's "yuck" and it won't be touched. Pretty sure their main goal in life is just to keep us parents guessing. I swear just trying to keep track of the things she likes is a full time job in itself. So if you have a picky eater, let me know how these turn out as a breakfast option for your little!
Cinnamon Banana Muffins
- 2 cups All Purpose Flour
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 2 - 3 bananas
- 2 eggs
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
Topping:
- 1/2 cup sugar
- 1 tsp cinnamon
- 3 tablespoons butter
Instructions:
- Mix sugar, eggs, and vegetable oil with whisk.
- Add in mashed bananas one at a time.
- Add salt, baking soda, vanilla and cinnamon.
- Slowly add in flour.
- Fill greased muffin tins 2/3 full.
- Bake at 375 degrees for 17-21 mins.
- Let cool on cooling rack for 5 mins.
- Then mix together cinnamon and sugar for topping mix.
- Dip top of muffin into melted butter and then into cinnamon sugar mixture.
- Enjoy!
