Energy Power Balls
It's no secret, I've been loving my Peloton fitness workouts for a long time now (about 4 years). We first started with the bike for indoor cycling and then bought the tread and fell in love with that. I love that you can do any kind of workout you would like, they range from 5 mins to 90 mins && everything in between. They have yoga, pilates, strength training and HIIT workouts. There is something for everyone and at every level in your fitness journey. I absolutely love being able to do them on vacation and at home. I just modify to what I need. On my journey to being healthier, my fitness level has constantly changed. I've changed. I've had 2 babies and although I was incredibly active growing up, having two kids has changed my world. I have to pause and stop workouts. I pause for crying babies, I pause for filling sippy cups, I pause for hugs and I pause for kids who want to join so I can get them set up too. I wouldn't change my life for anything though. I want my girls to know my world revolves around them. For the most part, I don't mind the interruptions. Some days I lose my cool but I really want them to grow up with a healthy mindset around themselves and how they see themselves. I don't want them to struggle with the same things I struggle with, so we try to make it fun for the whole family.
We have been trying to find healthier alternatives to some of our favorite meals and swapping out some "not to great" ingredients for better ones. Breakfast can be hard for me sometimes because I constantly reach for english muffin with peanut butter or bagel & cream cheese. Neither are bad on occasion but they aren't keeping me full for very long. I started making these power balls and I have found them to keep me full longer. Anthony never likes to switch up what he eats. He would rather starve all day and only eat dinner than try something labeled "healthy."
Well.... last week he started eating these and actually reported liking them! Huge win! They are super easy to make and taste delicious!
- 1 cup (dry) oatmeal
- 2/3 cup coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/3 cup honey
- 1 tbsp. chia seeds
- 1 tsp. vanilla extract
